Pan Seared Steak and Leeks with Demi-glace

This beautiful, quick, and simple recipe serves as a vehicle for my newest achievement! I have finally collected enough bones to make my own demi-glace, check out the recipe for my Demi-glace that I shared yesterday here! After hours of skimming and simmering, I was itching to try out my sauce!

Seared Steak with Roast Carrots, Tomatillos, and Carrot Top Chimichurri

This weekend, I had the pleasure of gathering another half a dozen beautiful tomatoes, a little purple bell pepper, and I decided to dig up my carrots. I have been looking forward to pulling those carrots out of the ground for months. It was finally carrot time!

I grew one large carrot, and the others were kind of wonky, but still delicious. I grew heirloom rainbow carrots and was thrilled to see that I grew some orange, some white, and one really pretty purple carrot. Since the harvest was rather small, I wanted to make sure I present them honorably, and wanted to make use of the carrot tops, which were very plentiful.

Beef Wellington

As Gordon says, the star of the dish is a perfectly medium-rare piece of filet mignon, and I wanted to celebrate that! My friend Anwar, who runs International Grocery and Halal Meat, Inc. offered to find me a filet mignon for my dish. What an adventure that was! I came to the shop and he cut open a cow to find the tenderloin for me. I got to watch him butcher the meat and point at the cut I wanted. I ended up with about 3 pounds in two pieces.
